Pureed tomatoes:

1 tablespoon olive oil
1 medium onion, finely cleaved
3 cloves garlic, minced
1 can (14 oz) squashed tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon sugar (discretionary, to adjust acridity)
Salt and pepper, to taste
1 tablespoon new parsley, cleaved (for embellish)

Directions

Step 1: Season the Fish and the Fillets:

To begin, dry the fish fillets by patting them dry with paper towels. This will assist them with singing pleasantly when cooked. Season the two sides of the filets with salt and pepper.
