Mediterranean Baked Cod

Ingredients:

  • 4 x 120 g fillets of cod, hake, or haddock, all skin off, bone out
  • 1 large ripe mixed-color tomato
  • 3 or 4 sprigs of fresh basil
  • 1 lemon
  • Extra virgin olive oil

Steps:

  1. Preheat the oven to 200°C/400°F/gas 6.
  2. Put the fish fillets into a baking dish and season well.
  3. Slice the tomato and arrange slices on top of the fish.
  4. Pick and scatter over the basil leaves, then slice over most of the lemon.
  5. Drizzle well with extra virgin olive oil, season with pepper, and tuck any overlapping basil leaves into the tray.
  6. Bake for 15 minutes, or until it looks beautifully gnarly and the fish is cooked through.

  • 300 g ripe mixed-color tomatoes
  • 30 g piece of ginger
  • 4 x 120 g fillets of white fish
  • 1 heaped teaspoon Patak’s rogan josh paste, plus extra if needed
  • Extra virgin olive oil

Steps:

  1. Chop the tomatoes and ginger, then place in a large shallow casserole. Add 800ml of boiling kettle water, then blend with a stick blender until smooth.
  2. Cut the fish into 2.5cm chunks, stir into the sauce with the rogan josh paste and a pinch of sea salt, then pull the sauce to one side so you can taste it. Add a little more rogan josh paste if needed.
  3. Bring to a simmer, stirring occasionally, then reduce the heat to low and cook for 4 to 5 minutes with the lid on.
  4. Kilner jars are perfect for storing the curry – portion the curry between them, then cool and refrigerate until needed.

Asian Tuna Tartare Cups

Ingredients:

  • 200 g piece of sashimi-grade tuna
  • 80 g hard cheese like Parmesan
  • 1 lemon
  • 4 little gem lettuce
  • Extra virgin olive oil

Steps:

  1. Place a clean, fine sieve over a bowl.
  2. Finely chop the tuna into 3 mm dice and add it to the sieve.
  3. Use a microplane to finely grate in the Parmesan, then finely grate in the lemon zest.
  4. Toss everything together and keep sieving and mixing until combined, then put the mixture into the fridge.
  5. Shell the cups slightly, then add the tartare mix, drizzle with extra virgin olive oil, sprinkle with black pepper, and serve.
