Italian Tuna Salad Recipe

Ingredients

  • 2 cans of tuna in olive oil, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup cucumber, diced
  • 1/4 cup Kalamata olives, halved
  • 1/4 cup roasted red peppers, sliced
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon capers, rinsed and drained
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar or lemon juice
  • Salt and pepper, to taste
  • Optional: 1/4 cup crumbled feta cheese or fresh mozzarella
  • Mixed greens or arugula for serving (optional)

Directions:

step 1:

After draining, transfer the tuna to a bowl. Use a fork to break it into pieces.

step 2:

Mix the ingredients together.

step 3:

To the bowl, add the tomatoes, red onion, cucumber, roasted peppers, olives, parsley, and capers. Gently toss.

step 4:

Mix vinegar (or lemon juice) with olive oil. Season with salt and pepper.

step 5:

Drizzle the tuna and veggies with the dressing. Toss in the coat.

step 6:

Serve it with greens or by itself. If desired, add cheese.

Tips

  • Use good quality tuna for the best flavor.
  • Add other veggies if you like!
